Created by the brewery's founder, Quilter's Irish Death is what we call a dark, smooth, ale. Any attempt at classifying it just ends up sending beer geeks into a style guidelines diatribe. So forget style guidelines. Is your pursuit of micro beer about tasting copies of a style that fit guidelines anyways? (Neither is ours) Irish Death is a malt bomb. We lovingly refer to it as beer candy. We heart our candy store. While tempting to session this beer, the name is a necessary reminder that despite the surprising approachability, this beer weighs in at a hefty 7.8% ABV.

We took some liberties with our interpretation of this Cream Ale, replacing the typically-used Noble hop with Domestic hops noted for their citrus flavors. The esters in the yeast add to a fruity middle. This gives us a crisp, clean-finishing ale that can serve as a 'gateway beer' of sorts... let's just say we hope to entice domestic drinkers into more, ah, INTERESTING waters. 4% ABV.

This full-bodied, slightly sweet Brown Ale has enough chocolate malt and hop bitterness for balance, and also happens to be high in gravity at 6% ABV. Its an ale in honor of spontaneity and good times, and is named after the legendary Brass Ass Saloon of Santa Rosa that embodied those qualities as well as anyone ever did.

Its like an imperial IPA with a big malt body. Dark red in color with lots of hop bitterness, flavor, and aroma, this ale is a malty, high gravity gem (7.5% ABV) crafted from two types of malt and four types of hops. Once called Loco-Motive Imperial Red Ale, we shortened... 'cause it was too long.

A medium-bodied, lightly-malty ale with medium hop presence that finishes exceedingly smooth. A blend of three domestic hop varieties, including Cascades, provides a light and subtle aroma and flavor. Named in honor of Ellensburg's biggest attraction every year since its founding in 1923, the Ellensburg Rodeo. 4% ABV.

A highly approachable IPA with lots of hop flavor and aroma, mild bitterness, and a dry finish. Dosed late in the boil, as well as dry-hopped, this India Pale Ale focuses not on the bitterness in the finish, but instead on the flavor and aroma of the hops. 5% ABV.

Cozy Sweater
A wintry experiment. Imperial brown, scottish, who knows what the hell it is other than malty and 7.25%. Available winterish time

Wheat, honey and ginger. A hefe with flavor before the fruit. No lemon required. In fact, please spare our beer from the embarrassment. Sorry to the loyal Iron Horse evangelists who just can't get enough of this beer. Summertime only.

The beer lovers have spoken. High Five Hefe will be going into bottles Friday, May 8th 2009. If you don't see it on the shelves of your favorite beer retailer, ask them and tell us where to put it. You're welcome.

The return of our people's choice award beer (Washington Beer Commission Winter Beer Festival 2007). Why mess with a good thing? Because whisky and oak can only improve matters in our opinion.
