A light-bodied ale with mild op presence that finishes exceedingly smooth. Simple in formula, the complexity of Rodeo is created through unique fermentation procedures. A blend of three domestic hop varieties, including Cascades, provides a light and subtle aroma and an overall light bodied flavor.

It’s like an imperial IPA with a big malt body. Dark red in color with lots of hop bitterness, flavor, and aroma, this ale is a malty, high gravity gem crafted from two types of malt and four types of hops (including Cascades and Centennials for flavor and aroma).

 

A full-bodied, slightly sweet ale with enough chocolate malt and hop bitterness for balance. This ale is high in gravity, and is crafted from three varieties of malt (including chocolate and caramel) and three varieties of domestic hops (including Mt. Hood and Cascades).

A highly approachable IPA with lots of hop flavor and aroma, mild bitterness, and a dry finish. Our IPA is unique. Dosed late in the boil, as well as dry hoped, with generous portions of three varieties of hops, chose to focus on hop flavor and aroma rather than bitterness.

Created by the brewery’s founder, Quilter’s Irish Death is an Imperial Sweet Stout with a big malt body and balanced bitterness. Employing over a half dozen varieties of malts, the taste of our ale is clearly stout. Hops take a back seat to malt, but flavor complexity is enhanced by a variety of hops.

 

Unlike most cream ales, we shied away from the extremely bitter Noble hop variety. We chose instead to accent the fruity middle created by the esters in the yeast. The result is the lightest of microbrews—an ale with low bitterness that finishes clean.
